XTMO
This original coupage is a mix of Verdejo and Viognier, two power grapes that nobody has had the audacity to work with them in the same bottle. This wine has obtained bronze medal in Valencia region and gold medal in the ecological competition of wines of Valencia. Peñín has given it 90 points and has invited us repeatedly for the Best Wines of Spain Fair.
This wine represents the risk, the audacity, the will to live. That is why these two grapes make this wine so original, and surprising. The terroir is also a determinant factor for XTMO. Mineral, floral and with an enormous complexity that is more typical in a red wine, but very weird and unique in a white one.

My wines and my winery are my life. I have established this company by myself, as a woman who wants to express herself through her wines. So this is the key of my success. I defend the good care of the land and the people who works it through the ecological farming. I try to communicate feelings with the help of the natural primary elements.  I work with indigenous grapes and try to show their best potential in combination with the land and the climate. All wines I have produced express something of my personality, but so many people identify themselves with my message, and so I have connected with the public very well.
Since 2002 I have been working in this area. After being partner in another winery, I decided to start with my own project. It was not easy because I was a businesswoman who came from another sector, without a family with a winemaking tradition. But I wasn’t in a hurry, so every obstacle was a challenge for me.
I currently have the respect of the market and my clients are more than clients, they are a part of my life.
I obviously count with the support of a great team without them it wasn’t possible. I produce my wines in Enguera since 2011, There I have my team, my installations and part of my vineyards. I have my heart divided between two regions: Utiel and Fontanars dels Alforins. For red wines I have chosen the mountain of Utiel, the Bobal grape, and the carácter of the Atlantic climate that arrives to me through the Iberian Mountain range. For white wines I prefer the Mediterranean influence, the mineral character of his ground, the sea breeze.

Les Dernières Terres

A rare and preserved terroir for exceptional wines : a vineyard located at 580 meters above sea level and nestled in a protected valley, on the edge of the Ventoux.
Les Davids is voluntarily conducted in organic farming, guaranteeing the preservation of biodiversity and the presence, on the grapes and in the cellar, of natural yeasts whose quality ensures perfect fermentation.
The design of the winery has been imagined in such a way as to use gravity in all the different processes of wine making in order to respect the quality, the integrity and the work done upstream.
From the selection of the vines to the winery, everything is written in the soil.
Nature has taken care of this land, providing it with water and good exposure, with a varied biotope of soils and sun exposure depending on the hillsides, which makes it possible to adapt and cultivate multiple grape varieties.

It is very important to our selection of the most characteristic vineyards Xarel.lo variety.
The production process has been designed to ensure that it fully retains its essential nature. The wine has been fermented in stainless steel tanks at low temperatures, in order to maintain the varietal presence and freshness.
Once fermentation, racking try to keep the lees to help us for 2 months to make battonages for more complexity in structure i mouth.
Once a tasting we decided to terminate the process, ended with the stabilization and final filtration prior to bottling.

Coup de Foudre 2019
White wine
“Coup de Foudre” is the first wine harvested at the Domaine, usually within the first week of September. The resulting wine is a blend of three Mediterranean white grape varieties; Grenache Blanc, Roussanne and Vermentino. The grapes are grown on two distinct soil types; the first plot is situated near the entrance to the Domaine on clay limestone and the second on schist at an altitude of 400m.

Coup de Foudre 2019
Wines

White wine
“Coup de Foudre” is the first wine harvested at the Domaine, usually within the first week of September. The resulting wine is a blend of three Mediterranean white grape varieties; Grenache Blanc, Roussanne and Vermentino. The grapes are grown on two distinct soil types; the first plot is situated near the entrance to the Domaine on clay limestone and the second on schist at an altitude of 400m.

THE VINIFICATION PROCESS

Immediately after harvest the grapes are stored in the cold room at 6 ºC for a minimum of 12 hours before being cold pressed. Whole bunch pressing then follows without any maceration at low temperatures of 4ºC. There is then a gentle clarification before transferring to 20-year-old Alsatian casks. The fermentation then starts when the temperature is raised to 18ºC. The vinification then proceeds without any chemical, or oenological, intervention. The wines are allowed to follow nature’s course. Aged on the lees, the wine then evolves naturally with malo-lactic fermentation taking place, or not, as nature dictates. When bottled in Spring, Coup de Foudre undergoes a light filtration with a minimum addition of sulphites to guarantee clarity and optimum stability.

A clear and brilliant wine that combines minerality, finesse and freshness with an aromatic palate that is rich in ripe fruit, rounded and with an impressive length. An outstanding wine

Demoiselle 2019
Red Wine
“Demoiselle” is a blend of Grenache, Syrah and Merlot, grown on schists and clay limestone soils.
It is a turbulent wine which likes to wear the rich, soft robes of the Pays d’Aude appellation and also run after the Mediterranean sunshine. It would like to visit the entire world without losing its breath, complementing all types of food from rich meats to refined spices, not forgetting the terroir of its origins.

Demoiselle 2019
Wines

Red Wine
“Demoiselle” is a blend of Grenache, Syrah and Merlot, grown on schists and clay limestone soils.
It is a turbulent wine which likes to wear the rich, soft robes of the Pays d’Aude appellation and also run after the Mediterranean sunshine. It would like to visit the entire world without losing its breath, complementing all types of food from rich meats to refined spices, not forgetting the terroir of its origins.

THE VINIFICATION PROCESS

The grapes are sorted and de-stemmed before being put into the vat. The grapes are gravity fed to preserve the quality and purity of the fruit. The vinification then proceeds without any chemical, or oenological, intervention. The wines are allowed to follow nature’s course. The fermentation lasts approximately two weeks and a low temperature of 20°C is maintained to ensure a slow extraction, without any punching down or pumping over. Demoiselle is aged in a combination of wooden vats (foudres) and stainless-steel tanks. Bottling takes place at the end of the second quarter. Before bottling Demoiselle undergoes a minimal addition of sulphites to guarantee an optimal stability.
Demoiselle 2019 is certified “Vin Méthode Nature”.

TASTING NOTES

A garnet robe with a violet rim. Demoiselle presents an intensely flavoured wine with an expressive palate of ripe black fruits; cherry, blueberry and plum. The wine is richly flavoured, dense, but thanks to the freshness of the acidity, it is balanced and harmonious and can be immediately appreciated. A long and complex finish promises a wine for laying
down, for those with patience!

Viticultors Del Priorat
Viticultors del Priorat was born in 1997, blending passion for wine and bond to the land.
Through our history, we have evolved and understood our natural environment and our own labour.
Since we bought the property, different projects have followed; and what originally was an attempt to make our activity sustainable, have finalized with the organic certification of all of our vineyards and wines in 2019.
To celebrate this achievement, we have increased our portfolio with new releases; all of them expect to be the reflect of the vineyard in which they are born and an evidence of the attention and care that we take in the winery.
