Almas Caviar or Albino Sterlet Caviar is the rarest caviar in the world.
It comes from sturgeon specimens that lived at very deep depths and lost their pigment. It is the finest caviar, very creamy and has a butter-like colour, when freshly prepared and turns golden as it matures.
The most expensive caviar is the exclusive variety called Almas, which in Russian means “diamond”, and its price is almost as high as that of the precious gemstone.
