This reserve cava vintage 2019 is born from a complex selection of best organic grapes from vineyards in the high areas of Requena. It has remained in total calm for more than 25 months at 15ºC and without any sudden changes in temperature or light. It has been growing in complexity and roundness in the mouth and polishing the finesse of its bubble.

100% native Tinta de Toro from vines planted between 1960 and 1988.
Natural spontaneous fermentation without added sulphates in open stainless-steel tanks with temperature regulation. Pellicular maceration 15 to 18 days with manual punching down twice daily and two final "délestages".
24 to 30 months in 225-litre French oak barrels with a maximum of 33% new barrels.
Full deep cherry. Strong and complex aroma of black fruit confit, liquorice, a fine toasted edge (black cacao), and a touch of minerals (graphite). Dense and elegant in the palate, with a great, lengthy personality.

Serving Suggestions: Enjoy it with light spicy sauces, white meat, Fish dishes or as a refreshing aperitif.

APOLLINE is a name inspired from Greek Goddess, the power of the sun as the strength of the wine. She is a typical red wine from our Corbières Region.
Grapes grow in calcareous clay ground, not very fertile but well drained; Harvested from selected vines (Grenache Noir, Syrah and Carignan); traditional destemmed vinification process with wine partially aged in oak barrels. All this gives her a taste of red fruits, mochas and spices. She is a wine with rich but balanced taste; giving also a smooth aftertaste with a woody touch at the end...
