Eleonore
ELEONORE is a name inspired from history, a woman with a strong character, a leader and independent, from the Middle Ages. She is a typical strong red wine from our Corbières Region. Grapes grow in shale soil that is located at altitude; Harvested from selected vines (Grenache Noir and Syrah); traditional destemmed vinification process and aged in oak barrels. All this gives her a purple colour; a nose on toasted notes of spices and violets. She is a round wine with rich tannin and with buttery notes. She boasts for a strong potential of conservation.

Arbejd
Arbejd is a 9 days old pure malt 47%. The scent, the ethereal, the ever-piercing aroma of peat and phenols. The fog of war, the fumes of old. Arbejd is our peated expression. Here smoke and peat take the centre stage. This spirit is based only on Sherry Oloroso barrels which adds a balancing sweetness to the bold spirit. The barrels are loaded into our reactor together with a raw, peated new-make spirit and left to transform for 9 days.

Waves of salt speckled smoke overwhelms your pallet, shining through is a promise of safe harbour, caramel, ripe apples and black tea lingers in the background. Arbejd offers an elegant smoky character with well-integrated sweetness leaving you longing for another sip.

In 2017 he left the beer business to explore the future of whisky and spirits making. Through years of development and academic research we have invented, and refined methods to accelerate ageing of spirits.

Call of Excise Duty
Hailing from Portuguese barrels, this 7 days old pure malt 43% has decades of heritage in its composition. This spirit is made using Port Wine barrels in combination with Burgundy Brandy barrels. The wood from the different barrels is loaded into our reactor and are left to transform and age for 7 days. Using ultrasound, elevated temperatures and controlled oxygenation we are able to transform raw, white spirit into oaky drops of gold.

Colline Novaresi Nebbiolo doc bio Gratus
This wine (85% Nebbiolo and 15% Vespolina) is a young Nebbiolo with a rich bouquet and taste: a fruity nose with scents of raspberry and black pepper, while in mouth is softly tannic, equilibrated, harmonic, persistent and well structured. This wine ferments for 8/10 days and then is aged for 12 months in big oak barrels.

Podere Ai Valloni
Podere ai Valloni was the first winery to be registered as a Boca doc producer. The ancient Cà Finazzi started producing Boca in the 18th century. The Boca doc was born in 1969, but sadly, after only a few years the vines almost disappeared in the whole region.

Vino rosso bio Sass Russ
A  younger and fresh wine produced with 50% of Nebbiolo and 50% of Uva rara.  After the pressing and a 4/5 days fermenting process, the wine is poured in stainless steel containers and repoured in order to eliminate the dregs. The wine ages in steel for 6 months and afterwards it is immediately bottled after filtering.

A  younger and fresh wine produced with 50% of Nebbiolo and 50% of Uva rara.  After the pressing and a 4/5 days fermenting process, the wine is poured in stainless steel containers and repoured in order to eliminate the dregs. The wine ages in steel for 6 months and afterwards it is immediately bottled after filtering.

TYPE OF SOIL 
We cultivate, vinify and dream in the DOC Friuli Isonzo area in the eastern part of Friuli Venezia Giulia. The Doc Friuli Isonzo is a green area that includes a flat territory on the banks of the Rivers Isonzo and Judrio, gently sloping from the hills of the Collio and the Karst towards the Adriatic Sea.

At the foot of the Colle of Medea we mainly produce our Friulano “Sot la Mont” DOC Isonzo.  Here the terroir is characterized by noble clays mixed with red gravel.
Another part of the Friulano’s vines are located behind the manor house as for the Pinot Bianco (Blanc). Here the terroir is composed of colluvial deposits, red earth and other types coming from floods of other waterways such as Versa and Torre.

The exposure is south-south-east. 
First year produced: 1952

AGEING
The wine is left to age on the lees in stainless steel tanks for about 10 months and a few months in the bottle.
Alcohol content (vintage 2021): 13.5% vol
Total tartaric acid (vintage 2021): 4.80 g/L

TASTING NOTES 
Friulano is a fine, delicate, elegant wine, rich in structure and balanced
Straw yellow in colour and green reflections, from the immediate scents of flowers to sweet almond up to a hint of sage. The taste recalls memories of flowers and peaches but an almost balsamic aftertaste is perceived. It is a mineral wine with an elegant acidity that makes it long and fresh.

SERVING SUGGESTIONS
The Friulano, the non-aged one, expresses that perfect acidity to accompany dishes such as sushi and tempura. It is an excellent wine as an Italian apéritif. The vegetable note of Friulano suggests an accompaniment to omelettes and soups made with spring herbs collected in the meadows. Also with the Hokkaido potato and scallop soup.

The Malvasia Istriana is a vine belonging to the great Malvasia family of Hellenic origin and its cultivation in Friuli-Venezia Giulia dates back to 300 AD.

The Malvasia Istriana is a vine belonging to the great Malvasia family of Hellenic origin and its cultivation in Friuli-Venezia Giulia dates back to 300 AD. 

TYPE OF SOIL

The Malvasia is grown behind the manor house near the old vegetable garden where grandfather, Severino Brumat, planted the vegetables that enriched the peasant table; there are vineyards that have seen more than 50-70 years of harvests. The terroir is composed of colluvial deposits, red earth and other types coming from floods of other waterways such as Versa and Torre.

The exposure is south-south-east. First year produced: 2015

Ageing
The wine is left to age on the lees in stainless steel tanks for about 10 months and a few months in the bottle.
Alcohol content (vintage 2021): 13.5% vol
Total tartaric acid (vintage 2021): 5.70 g/L


TASTING NOTES 
A 70-year-old vineyard that is pampered until the harvest of its fruits, which is done manually, gives life to Malvasia. Istrian Malvasia, the wine that perhaps best expresses our land. With a straw-yellow color and golden reflections, the nose immediately makes us understand the typical floral structure, you can perceive notes of orange blossom typical of the area from which this vine comes.
By drinking it you can savour notes of bitter almond, finely citrus, persistent, complex.
Tasting it we find ourselves walking in a stable meadow, or in one of those ancient meadows that renew the tradition of wild flowers and wild herbs of which Friuli still manages to guarantee its survival.

SERVING SUGGESTIONS
Excellent fish wines (pasta, risotto with seafood, both roasted and salted crustaceans).

Still Red Wine from 100% Cabernet Franc that when it arrived in Italy from France, more precisely from the Gironde, it had a high-sounding name: Carménère! Tuscany and Friuli are the paradises of this wine with a distinctly herbaceous flavor.

Still Red Wine from 100% Cabernet Franc that when it arrived in Italy from France, more precisely from the Gironde, it had a high-sounding name: Carménère! Tuscany and Friuli are the paradises of this wine with a distinctly herbaceous flavor. 

TYPE OF SOIL 
We cultivate, vinify and dream in the DOC Friuli Isonzo area in the eastern part of Friuli Venezia Giulia. The Doc Friuli Isonzo is a green area that includes a flat territory on the banks of the Rivers Isonzo and Judrio, gently sloping from the hills of the Collio and the Karst towards the Adriatic Sea. 

The Cabernet Franc is grown in the area on the left side of the Isonzo river is characterized by moderately deep soils, sometimes even thin, with a generally frequent skeleton, with a loose or clayey texture, sub-alkaline or neutral, poorly calcareous or non-calcareous, with rapid to good drainage.

The exposure is south-south-east. First year produced: 2009

AGING
The wine is left to age on the lees in stainless steel tanks for about 10 months and a few months in the bottle.
Alcohol content (vintage 2021): 13% vol
Total tartaric acid (vintage 2021): 5.40 g/L


TASTING NOTES 
Ruby red in color but with brilliant purple reflections, our Cabernet Franc is immediately fresh and herbaceous on the nose.
Pausing, however, we can distinguish a complexity of aromas that lead to the memory of violets, blackberries and a peppery tip.
When tasted, you can find it! Fresh, fruity, persistent, all details that make us understand how sincere it is, how much we have left this grape free to express itself.

SERVING SUGGESTIONS
To combine with game or roasts, especially pork and let yourself be amazed. It will be interesting to involve this wine with Japanese dishes such as Rafute, a traditional Japanese dish originating from Okinawa, or the Gyoza, fried ravioli stuffed with spring onion, marinated pork and various spices dominated by black pepper.

Best serving temperature: 18-20 °C

TASTING NOTES 
One of the most elegant wines, with a straw yellow color and green reflections, the nose is immediately floral and fresh. 
Its elegant bouquet of apple, pear and lemon, together with the notes of hazelnut and hay flowers, make it a very versatile wine in combinations. It has a lively acidity and a refinement of flavors, one gets the impression of being on the bank of a river.

SERVING SUGGESTIONS
Amazingly good with fish dishes but try it, too, with mushroom or truffle first courses. 
Perfect for the Japanese cuisine.

Controlled maceration times, temperature and the use of wine fermenting tanks allows us to find the perfect balance of colour and tannins development. Flowers and fruit aromas are an important touch in the taste. Fermentations is performed at different temperatures, at the discretion of our technicians. The exact technique depends on the weather, the grapes used and our objective.The wine has a shocking-palate with balsamic and roasted aftertaste, developed in conjunction with floral notes.
