Teff is an ancient grain considered to be a superfood because of its multiple health benefits. Although it is still unknown to most people, Teff’s origin is believed to have taken place more than 5000 years ago in Ethiopia, where it is nowadays a staple food. Among its wonderful properties, the absence of gluten in its natural form and the high content of healthy minerals, fiber and essential amino acids can be highlighted.
The harvested teff is cleaned, sterilized and blended to guarantee a clean standardized grain that can be used for milling, as an ingredient in other industrial processes or to pack into consumer sized packing. There are two varieties available: white and brown teff

To make this product , we cook, roll and dry the teff. The result are small flakes with a slight toasted nuts aroma. One of its main proparties is a great capacity to bind water. It is used for bread, mueslis, porridge, for adding to yogurt, for decoration on bread and biscuit, chocolate products,bars,etc.
Teff flakes can substitutebread crubs and other cereal in meat products and they are excellent for making vegan and vegetarian products. Very good meat replacement products can be made.

This is Nordic Tempeh made from organic Danish fava beans and local seaweed (Sea lettuce) harvested in the wild.
